Cook the Sealord Potato Crumb Hoki fillets as per the instructions on the box.
To make the salsa, combine the cherry tomatoes, gherkin, avocado, lime zest and juice, coriander, chilli flakes, salt and pepper in a small bowl.
To serve, spread a large dollop of hummus on the flat breads and add spinach, tomato salsa and Sealord Potato Crumb Hoki fillets. Squeeze over extra lime juice and a dollop of yoghurt.
